throughout the season, we offer a variety of workshops. some of these, we host and teach ourselves, for others we invite makers, artists, and artisans to share their knowledge, skills, and crafts.
muddy minds
workshop & dinner

we developed a vegetable garden and an earth oven on the grounds of REST, where cooking takes place over two days with the crops that have been growing in the last months. The garden and the oven stand on the same ground beneath which the excavations expose the traces of earlier habitation and cultivation. What is sown and cooked here is itself a form of sedimentation in the making: compost, food, and matter settling into this place. Where geo-archaeology reads the soil to understand what was once left behind, the land shows how ground is worked and shared anew today. This too is form of heritage, not preserved in a display case, but eaten, digested, and returned to the soil.
Inspired by the hidden, collective networks that make up a healthy soil, the land has designed an evening of guided collaborative dinner prep, to highlight both the immense amount of effort that goes into making and hosting a meal (starting from the seed!), but also how through joint work and cooperative planning we can lighten what might otherwise feel burdensome, and even make it feel energizing. Throughout the afternoon and evening, participants will be guided in groups through designing table scapes, working with the earth oven, and taken on a tour to learn more about the works of the artists of the Muddy Minds exhibition. Everyone will then gather together to reap what they have sown: a bountiful dinner and a moment to reflect on the collective contributions prior, present and forthcoming.

sharing to cook is a monthly workshop series through which we want to emphasise the value of horizontal knowledge transfer and highlight the diversity of tastes and cultures in amsterdam. each workshop is centred around a seasonal vegetable.
unlike traditional workshops with a single instructor, you can join and share your own skills and knowledge about cooking. bring along a recipe that holds personal significance for you, featuring the chosen ingredient of that workshop. you can let us know what ingredients you will need for your dish so that we can see what we can provide and what you might have to bring yourself.
during the first half of the workshop everyone will prepare their chosen recipe. the second half will be a shared meal, during which everyone presents their dishes, explains their cooking techniques, and shares the stories behind them.
