mint braised leek

ingredients

      leeks

      olive oil

      mint

      snap peas

       

cut leeks in 6cm chunks at an angle

Soak in cold water

While leeks are soaking, cook mint in oil under low heat

Once oil has cooled, add leeks to a shallow frying pan so that they are evenly spread out and not stacked

Add a bit of water,  more mint & salt and braise leeks until tender (about 45 minutes)

Add blanched snap peas on top for garnish

Salt and pepper to taste
